More about this coffee

Ombligón from the highest plot of La Perla del Otún in Pitalito (Huila), separated for the first time from Luis Alberto Jojoa's field blend. "Cochadas" process: several days of picking accumulated in the same tank, the first acting as a starter, then a classic wash.

Singular's post-it: a very clean cup, red fruits and flowers over a hint of spice, with a sweet, creamy body.

Luis Alberto Jojoa, Finca La Perla del Otún

Charguayaco, Pitalito, Huila, Colombia 🇨🇴

Luis Alberto Jojoa was picking cherries for Antonio Castro when Castro offered to sell him a piece of land, paid in days of work rather than money. "I earned this land with the sweat of my brow," he says of La Perla del Otún, two plots clinging to the sides of a canyon in the hamlet of Charguayaco, in Pitalito in southern Huila, on the edge of the El Silencio nature reserve. His first plot, bought for next to nothing because it is so hard to reach, is also the highest: Ombligón grows there at around 1,900m, in the shade of two mountains, and ripens slowly. Winner of the Colombian Cup of Excellence in 2006, Luis also grows Caturra, Castillo and Pink Bourbon. Until now, Noma Kaffe bought a blend of the first three varieties from him. In 2025, Carolyne Lane asked him to separate the Ombligón, a cautious 100-kilo trial he first viewed with suspicion, before declaring it the best cup on the table in a blind tasting. His method, the "cochadas", consists of accumulating several days of picking in the same tank: the first days act as a starter for a fermentation that, in the cold of the farm, would otherwise be too slow. The aim is not to go funky, only to loosen the mucilage. 2026 is the third year of work between Luis and the noma team.

Noma Kaffe

Denmark 🇩🇰

Noma Kaffe is the coffee of noma, the restaurant René Redzepi opened in Copenhagen in 2003, voted best restaurant in the world five times between 2010 and 2021 before earning three Michelin stars. Coffee there was long treated like the rest of the menu, with obsessive standards and advice from Tim Wendelboe, the Oslo roaster. In 2019, Carolyne Lane, the Briton who runs the restaurant's coffee and tea programme, negotiated the purchase of a small Ikawa roaster, which she paid back out of her salary, to understand the bean all the way through. In 2024 she hired Alastair Hesp, former head roaster at Bonanza in Berlin, and noma began roasting for real, a few minutes by bike from the restaurant. The Noma Kaffe subscription, launched under the Noma Projects banner, opened on 6 March 2025 and quickly sold out.

The style follows the kitchen's: washed coffees first, to read terroir and variety rather than fermentation, separated into micro-lots of 50 to 200 kilos, roasted light and profiled for soft water. Sourcing extends the restaurant's relationships: the Tseltal community of Tenejapa in Chiapas, met during the Tulum pop-up in 2017, and Ethiopia, visited from 2018. René Redzepi tastes, Carolyne chooses the lots.
