Divino Niño community lot, Suaza
Suaza, Huila, Colombia 🇨🇴
Divino Niño is a community lot from Suaza, in Huila, brought together by more than fifty small producers growing Caturra, Castillo and Colombia between 1,400 and 2,000 metres, in a temperate Andean climate. The coffee is first processed as a classic washed, then decaffeinated.
So-called "sugar cane" decaffeination relies on ethyl acetate, a compound found naturally in ripe fruit, bananas or beer, and obtained here by fermenting cane molasses. The green beans are steamed, then ethyl acetate circulates through them and binds to the caffeine to extract it, preserving most of the aromatic compounds. Once the target caffeine level is reached, the residues are removed with steam.
Replica has been looking for good decaf lots since the beginning, and welcomes the growing attention the industry is paying to this long-neglected category. This one is very balanced, with high sweetness.
Replica
Belgium 🇧🇪
Jasper De Clerck roasted coffee in Berlin for one of the big names of German specialty before returning to Belgium and founding Tane Coffee Collective, a roasting cooperative in Leuven. In 2023, with his partner Ester Visker, he took the idea a step further by launching Replica Roasters, a micro-roastery in Herent, on the outskirts of Leuven. The project lives up to its name. Their machine, a fully electric Stronghold S9X powered by local renewable energy (solar and wind), reproduces every roast profile with formidable precision. Replicating, here, is not copying. It is guaranteeing that every lot delivers in the cup exactly what the cupping promised.
When it comes to selection, Jasper and Ester have a clear bias. They look for clarity, sweetness, juiciness and balance. Their range favours bright washed coffees and very clean naturals, with silky textures and a floral touch. You will not find over-fermented or winey coffees here. It is a deliberate choice that gives their range a coherence rare for a roaster of this size.
Replica works with trusted importers such as Raw Material, known for its in-depth work with producers. Their Rwandan selection from the Shyira wet mill, perched at 2,000 metres (a washed Red Bourbon, bright and juicy), got them noticed by The Coffeevine as early as 2024. Their offer also includes Geishas from Panama, honey-processed Ecuadorian lots and Ugandan coffees with singular profiles.
With some twenty years of combined experience in coffee and gastronomy, Jasper and Ester have built Replica as a playground where nothing is left to chance. From sourcing to roast profile, every decision serves a single obsession: a limpid cup.
