Collection: Valini 🇫🇷

A former sales director for wine estates, Rudy Aubert had his revelation in 2016 over a Turkish coffee prepared by Bedouins in Jordan. In 2024, he took over Valini, a Nîmes roastery that has since won second prize for the best espresso in France.

Valini is a Nîmes roastery taken over in May 2024 by Rudy Aubert, after several months of handover with Allan, its founder. Rudy comes from wine: he spent fifteen years as an international sales manager in the sector. He also comes from a small family publishing house in Nîmes, Kako édition, known for the adventures of Angèle and José, which published a book for the centenary of the Meilleurs Ouvriers de France competition. What sparked his love of coffee? A Turkish coffee during a trip to Jordan. To change careers, he trained with a roaster holding the title of Meilleur Ouvrier de France, a barista champion and a major green coffee exporter.

Seasonal Coffees

The menu follows the seasons and changes regularly. For the 2025 Meilleur Expresso de France competition, Rudy created "l'As de trèfle" (the Ace of Clubs), a blend built on a Mexican Geisha from the Santa Cruz farm, completed by a Colombian and an Ethiopian coffee. It was named best regional espresso for the South-East, then placed second in the national final. In 2026, Valini also won a medal at the Gard Gourmand competition with a coffee from Finca El Placer, from Colombian producer Sebastian Ramirez.

Coffee at the Chef's Table

Behind the shop, a tasting room kept dark and lit in red is used for blind tastings. Valini supplies several restaurants in the region, including Duende, the two-Michelin-starred restaurant at the Hôtel L'Imperator. In 2024, the company joined the Collège Culinaire de France, the association that brings together quality artisans, producers and restaurateurs: Rudy was then the only roaster from the South-East to join.
