Collection: Subtext 🇨🇦
Before founding Subtext in Toronto in 2020, Alex Castellani spent six years selecting lots from the best roasters in the world. His rule: single origin only, no blends and no dark roasts, and the producer's name printed on every bag.

Subtext Coffee Roasters does not roast blends. Does not offer dark roasts. Does not rename its coffees. Three refusals that, taken together, mark out a radical position in North American specialty coffee. Based in the west end of Toronto, at 130 Cawthra Avenue, this micro-roastery founded in 2020 by Alex Castellani starts from a simple observation, which he sums up in one sentence: "Coffee is labour and agriculture. The byproduct is a barely explored bounty of diversity in expression." The whole Subtext project flows from there. If coffee is first and foremost an agricultural product, the result of skilled hands working in distinctive terroirs, then roasting it dark, blending it or giving it a fancy name amounts to erasing the people who grew it. Each bag therefore carries the producer's name, their exact locality, the process and the botanical variety. No "House Blend", no "Morning Roast". Just Ernedis Rodriguez, washed Sidra, Nariño, Colombia.
Castellani did not come to roasting by chance. In 2013, he co-founded Boxcar Social with John Baker, Joe Papik and Chris Ioannou, a hybrid café and wine bar concept that opened on Yonge Street in Summerhill before expanding to several Toronto locations. Boxcar Social ran on a rotating roaster model: every week, the team cupped dozens of coffees to build a menu that introduced Torontonians to the best roasters in the world. Coffees were served in "flights", with TDS readings displayed on an iPad at the counter, in a spirit borrowing as much from natural wine tasting as from sensory analysis. Castellani, who also came from photography and café design, spent six years there developing a culture of precision and palate. But over time, something was missing: a direct link with producers, an intimate understanding of the roasting process, the ability to shape the value chain rather than just comment on it.
From the Pandemic to Cawthra Avenue
Subtext was born in early 2020, a few weeks before Toronto went into lockdown. On paper, the timing was disastrous. Yet Castellani describes it as a "blessing in disguise": forced to run as a warehouse only for months, with no public access, he focused entirely on production, roast profiling and building a brand identity. The Cawthra Avenue space, in its current form, is the result of this maturing process. It houses a roasting workshop, a café open Monday to Friday and, above all, tiered seating facing the bar, fitted with a projector, designed to host seminars, monthly cuppings and talks by visiting importers or producers. Education is not a marketing extra: it is an architectural function of the place.
On the roasting side, the approach is obsessive in its rigour. Every lot of green coffee goes through density and moisture analysis before roasting. During the roast, several thermocouples track temperature curves to the second and to the degree. After roasting, a ColorTrack measures development and bean uniformity, while solubility tests (TDS and extraction yield) check performance in the cup. And to avoid what the wine world calls "cellar palate", the tendency to get used to your own flaws, the team systematically tastes its profiles blind, comparing them with the best expressions from roasters it respects around the world.
Transparency as a Method, Not a Slogan
Every year, Subtext publishes a detailed transparency report on its website, documenting the prices paid to producers, the volumes bought and the intermediaries involved. It is a rare move, and it reflects a conviction Castellani states bluntly: direct trade, as it is often promoted in specialty, can be just as opaque and exploitative as traditional channels. Rather than claim a flattering "direct trade", Subtext names its partner importers and openly says that most of its coffee goes through intermediaries chosen for their values. The relationship with Colombian producer Frank Torres, for example, has lasted five years. His family has grown coffee for more than fifty years on two hectares in La Pradera, Nariño, and Subtext has selected several of his lots over the harvests, including a hydro honey Sidra.
What is ultimately striking about Subtext is how closely practice matches the words. Castellani puts it with a lucidity that avoids preaching: "Homeostasis is discomfort." Believe in your project, but never be satisfied. Five years after starting out in a warehouse closed to the public, Subtext has become one of the most rigorous roasteries in Canada, with a community of drinkers who follow it as much for the quality in the cup as for the honesty of the approach.
