SO Coffee Roasters was born in Porto in 2019, founded by three friends who met at a previous coffee company: Lisa, Pedro and João, who came from law, classical dance and music. The name is a geographical marker: "SO" for "Southwest", the south-west of Europe, where Portugal lies. For the team, coffee is a "social instrument", a link between those who grow it, those who roast it and those who drink it.

From Porto to Lisbon

SO's first bars opened inside The Feeting Room, a Porto concept store, then, a few weeks later, in its Lisbon store. The company now runs several cafés and espresso bars across the two cities. Sourcing is at the heart of the project, as Rui Pedrosa, one of its leading baristas, explains: "We are focused on having distinct coffees, so sourcing ends up being one of the most important things we do."

A Team of Champions

Rui Pedro Bastos Pedrosa first worked as a waiter in the Michelin-starred restaurant of a five-star Porto hotel. He learned the barista trade from scratch at Five Elephant in Berlin, then joined SO, where he says he found "the home that I was looking for since I left Berlin". In 2022, he became Portugal's barista champion and finished fifteenth at the World Barista Championship in Melbourne. In 2024, his colleague Luiz Lahutte Motta won the Portuguese Brewers Cup, before representing Portugal at the 2025 World Brewers Cup in Jakarta.
