Fjord Coffee Roasters Berlin was founded in 2016 by the three owners of two iconic Berlin cafés, Father Carpenter and Silo, bringing together their experience and expertise. Their mission is to explore new and unique coffees. We interviewed one of the founders, Kresten Thøgersen, who shares their vision of coffee.

High-Quality Coffee for Everyone

Fjord Coffee Roasters is a Berlin roaster whose goal is to reveal the rarest and most unique flavours in coffee. Affiliated with Silo and Father Carpenter, two very popular specialty cafés in Berlin, Fjord has become a key player on the specialty coffee scene.

Kresten explains:

"The three owners of the two cafés discussed our respective strengths and weaknesses to design a roasting operation that makes the most of our individual skills. I specialise in coffee and product, Morgan is an expert in sales and advertising, and James excels at writing and business strategy. Together, we concluded that it would be best to run a roastery as a team."

Launching Fjord Coffee: A Decision Based on Gaps in the Coffee Industry

Kresten points to a common problem in the coffee industry:

"The business is complex. It's not just about products; there's also service, communication and values. Too often, putting too much focus on one aspect, such as the product, leads to neglecting the others. Our decision to run a roastery as a team is meant to avoid that kind of imbalance."

This consistent approach shows in the two distinct brands, Fjord Coffee and Field Coffee.

Fjord Coffee: a brand built around unique flavours and premium coffees, with refined packaging.

Field Coffee: a brand offering coffees that are accessible to a less expert audience, while keeping high quality.

Kresten adds:

"Having two brands also lets us better support coffee producers in El Salvador and Guatemala. We buy larger quantities of coffee from a small number of producers, which helps them stay financially stable."

Where the Passion for Coffee Began

Kresten did not choose coffee at first. He started attending coffee seminars at 15, at the request of his father, who owned a café. He remembers:

"At the time, I'd rather have been skateboarding. But that's where I started getting interested in coffee."

Growing up in a family of restaurateurs, he was shaped by an environment that valued quality and innovation in food. After high school, he moved to Melbourne and worked in a top-level café, which deepened his commitment to coffee.

Arriving in Berlin and Opening Father Carpenter

After stints in London and Melbourne, Kresten decided to open Father Carpenter in Berlin, drawn by the city's untapped potential for specialty coffee. He explains:

"In Berlin, it was rare to find cafés with table service and a food offering. I saw an opportunity, and my instinct proved right."

Fjord Coffee: A Flexible Approach to Unique Coffees

Fjord stands out for its commitment to working closely with producers to develop new coffees. For example, they considered buying a farm in Colombia to experiment with innovative processing methods. Their approach is driven by taste, not convention.

Kresten concludes:

"There are preconceptions that high-quality coffee has to be processed in a certain way, but what matters is taste. If the coffee is good, it can create memorable moments."

Fjord Coffee Roasters continues to stand out for its flexibility and its dedication to exploring flavour, while staying true to its core values.
