Collection: Colonna 🇬🇧

Maxwell and Lesley discovered third wave coffee in Australia, captivated by its attention to flavour and traceability. In 2009, they opened Colonna & Small's in Bath, in the UK, an address that became iconic and was named "Best Coffee Shop in Europe" in 2016.

Colonna starts with a couple and a café in Bath. In 2009, Maxwell Colonna-Dashwood and his wife Lesley opened Colonna & Small's, a small coffee shop in the centre of the English city. The approach was clear from day one: serve coffee as something to taste, explaining where it comes from and what it gives in the cup. The address soon became a must for British coffee lovers, and one of the most talked-about in Europe.

Three-Time UK Champion

Maxwell made his name in competition. He won the UK Barista Championship in 2012, 2014 and 2015, and reached the World Barista Championship final three times. In 2014, his routine focused on an ingredient almost nobody was looking at back then: water.

The subject became his speciality. With chemist Christopher Hendon, he co-wrote Water for Coffee, a technical book on how water composition affects extraction. He then wrote The Coffee Dictionary (2017) on his own, an A to Z of specialty coffee. In 2018, the pair launched Peak Water on Kickstarter, a filter jug that lets you adjust the hardness of tap water for coffee.

Roasting to Control Flavour All the Way

In 2015, the couple opened their own roastery, Colonna Coffee, to choose their coffees themselves and decide how each one is developed in the roast. Online sales followed in 2016. The range is organised in tiers, from the Foundation line, designed for every day, up to the Rare line, kept for exceptional lots, and some of the coffees also come in capsules.

More than fifteen years after Colonna & Small's opened, the house is still true to the same idea: understanding what happens in the cup, from water to bean, and sharing it.
